I love this chia seed jam with strawberries as you don’t feel like you are missing out on ‘real’ jam.
Packed with flavour and vitamins, you can indulge on this one totally guilt free. I even eat it straight out of the jar!
2 Cups chopped strawberries (washed and green stems removed)
1-2 Tablespoons lemon juice
1-2 Tablespoons honey
2 Tablespoons Chia seeds
- Cook strawberries in saucepan over medium heat until it breaks down and becomes syrupy. Mash if needed to create desired consistency.
- Turn off the heat. Add lemon and honey 1 Tablespoon at time, checking to taste before adding more.
- Once satisfied with flavour, stir in chia seeds and let stand for 5 minutes or until thickened.
- Transfer to sterilised glass jar. Store in fridge for up to 2 weeks. It will continue to thicken as it chills.
